Juice HACCP

The purpose of this workshop is to assist Juice processors with the development and implementation of HACCP programs for juice commercialization. This workshop fulfills all state and federal requirements for operation and sale of juice. The workshop is a combination of on-class and hands-on activities delivered over two days that will prepare students to safely process and package both vegetable and fruit juices in accordance to HACCP principles and FDA guidelines. These guidelines specify that only individuals trained in HACCP can perform certain critical practices within juice processing.
